  • 150g white sugar

  • 150g milk

  • 300g heavy cream

  • ½ teaspoon vanilla extract

  • 1 pound mascarpone cheese

  • ½ cup simple syrup

  • ½ tablespoon sake

  • 2 packs of ladyfinger cookies (3 ounces per pack)

  • 1 tablespoon matcha powder

Preparation of the tiramisu cream
  • In a medium saucepan, whisk together egg yolks and sugar until well blended. 

  • Whisk in milk and cook over medium heat, stirring constantly, until the mixture boils. After 1 minute, remove the pan from heat and allow it to cool slightly. Cover it tightly and chill in the refrigerator for 1 hour.

  • Arrange half of the soaked ladyfingers in the bottom of a 7 x 11-inch dish. Spread half of the mascarpone mixture over ladyfingers, then half of the whipped cream.
